The Shaddock? Our citrus UFO in the constellation of the Ephemerals. A Strong Bitter that balances British malt power with a burst of fresh citrus. With its 60 IBUs that pack a punch, it embodies our philosophy of creative brewing: dare, surprise, and delight.

Maris Otter and Biscuit malts give it that crisp nutty color and distinct notes of... biscuit (yes, we know, the malt name is a bit of a spoiler). Caramel rounds out the edges, creating that solid base typical of English bitters. But here's where things go off-script: fresh pomelo and grapefruit thrown straight into the boil. Boom. The noble bitterness of hops meets the juicy acidity of citrus.

The result? A beer that straddles tradition and boldness. Powerful without being harsh, fruity without being syrupy. It's our take on a Strong Bitter that's been on an internship in an orange grove.

The story

Born in our Éphémères series, Shaddock represents those moments when we let our creativity run wild. Those fleeting beers born from the desire to explore, to test, to surprise.

The name Shaddock? It's the old English name for grapefruit, a nod to Captain Shaddock, who introduced the fruit to Barbados in the 17th century. Our beer takes the opposite journey: a British base exiled to the citrus tropics.

This rather unique Strong Bitter (as we like to say) made a lasting impression during its run. Proof that even ephemerals can leave lasting memories.

Food and beer pairings

The Shaddock excelled with poultry dishes —the citrus flavor perfectly enhanced a roast chicken or duck à l'orange. But her favorite playground? Fried snacks. The bitterness and acidity cut through fat like a lightsaber through butter. Fish & chips, tempura, doughnuts—she transformed every fried dish into a taste experience.
